Celebrating the Winter Solstice

I wish I could bottle the energy of the holidays and sprinkle it around during the year. The love and light tends to be brighter during the season.


I’m celebrating…


Laughter from grandchildren.

Twinkling lights on a Christmas tree.

Listening to carols on the radio.

Hot chocolate on a cold, rainy day.

Smiles from passing strangers.

Winter Solstice celebrations have begun!



Light the Yule log and pass a cup of mead around. Or if you prefer, hot apple cider.


As we anticipate the battle of the aging Holly King and the young Oak King, light and warmth return. We may not see or feel it, but the wheel of the season is turning. The sun will linger a wee bit longer each day. Merry Yule!


 

Boiled Raisin Cake

3 cups of water

1/2 lb butter

2cups raisins

1 cup sugar

1 tsp cloves

1 tsp cinnamon

1/2 cup molasses

1 Egg, beaten

3 cups flour

2 tsp baking soda

Preheat oven to 350 degrees.


Boil these ingredients: water, butter, raisins, sugar, cloves, cinnamon, and molasses for 15 minutes. Let cool.


Add one beaten egg into the mixture and then combine 3 cups flour, 2 tsp baking soda and add into cooled mixture and mix well.


Bake in a well greased loaf pan for 1 hour.
