Friday Feast | Morgan's Pizza



We are a pizza loving family! For decades, the tradition of having pizza on a weeknight was always a possibility in this house. We have all voiced our favorites--from vegetarian to meat lovers, and the simple cheese pizza, especially when we've ordered from our local pizza restaurant. Yet I do love making the dough from scratch. It makes the house smell divine and tastes delicious!


Recently, my husband and I have found this simple pizza recipe our favorite. It's super easy to make and doesn't cost much either. He's the meat lover, and I prefer to have mine with artichokes, shallots, and cheese.

Mary and John's Garlic Naan Flatbread Pizza


1 shallot

Kalamata Olive Oil (or use extra virgin olive oil)

1-14 ounce can of artichoke hearts in water

Marinara Sauce

Sliced salami

Sliced pepperoni

Shredded mozzarella cheese

Red pepper flakes

2 Garlic Naan Flatbread (or any other flatbread)


Add two tablespoons olive oil in a frying pan on medium heat. Slice shallot and add to the pan. Cook for 1-2 minutes. Drain artichokes and chop. Add to the pan with shallots. Cook for approximately 15 minutes until they become a bit browned around the edges. Remove from heat.


Brush a little olive oil on flatbread. Put under the broiler for 30 seconds or until slightly browned. Remove from oven.


With one flatbread, top with the artichoke/shallot mixture and finish with mozzarella cheese on top. With the remaining flatbread, spread a thin layer of marinara sauce. Top with artichoke/shallot mixture, red pepper flakes, salami, pepperoni, and cheese.


Place under the broiler until cheese melts. Remove to cutting board and let sit for one minute before slicing.
