Friday Feast | A Comforting Bowl of Chicken and Smoked Sausage Cassoulet-Style Soup
Welcome to Friday Feast in the Tavern! So glad you could join us! With winter all around us, I tend to think of soups and stews for meals from my slow cooker or dutch oven. Quite simply, they're full of hearty warm goodness! Today's recipe is brand new this season. As always, I'm constantly tweaking and creating my own flavors, so I'm positive the basic cassoulet-style soup is far different than mine. And as you can see by the bottom photo image, I added Parmesan cheese in my soup, though I didn't include it in the recipe ingredients. Psst, I love cheese on everything.

Chicken and Smoked Sausage Cassoulet-Style Soup
Ingredients
1 ¼ pound boneless, skinless chicken thighs, cut into ½-inch pieces
1-13oz. pkg of smoked turkey sausage, cut into ½-inch slices
Half of an onion, chopped
25oz. jar of pasta sauce (I use an herb-based sauce)
2-15oz. cans of cannellini beans, rinsed and drained
1 ½ cups low sodium chicken broth
½ cup of white wine
1 teaspoon dried oregano
1//4 teaspoon of salt and pepper
Directions
In a slow cooker (4-6 quart), combine chicken, turkey sausage, onion, pasta sauce, beans, broth, wine, oregano, and salt and pepper. Stir to combine.
Cover and cook on low 7 hours or high for 3-3 ½ hours.
Serve with baguette slices.
