Here's the recipe I've shared for this year. It was given to me by my dear mother-in-law many years ago.
Marie’s No Bake Chocolate Cookies
2 cups sugar
3 tablespoons unsweetened cocoa
½ cup unsalted butter
½ cup whole milk
A pinch of salt
3 cups quick-cooking oats
½ cup creamy or nutty peanut butter
1 teaspoon vanilla extract
Place sugar, unsweetened cocoa, butter, milk, and salt into a large pot. Bring to a boil.
Quickly add oats, peanut butter, and vanilla extract. Mix well.
Drop by tablespoonfuls onto wax paper.
Freeze or place in the refrigerator for 30 minutes.
