Friday Feast | For the Love of Vegetables
If you asked my husband, he'd tell you that I was a rabbit in my former life. Why? Because I love vegetables (especially salads) and for my love of rabbits. Kidding aside, I do tend to grab a vegetable snack before anything else. Most people would consider vegetables a minor side dish. Yet I'm content to having them as my main meal. Psst...no, I'm not a vegetarian, merely a vege lover.
It's been a long week, and I'm heading into a longer weekend and week ahead. I'm heavy into edits for MAGNAR: The Wolves of Clan Sutherland, so I have no time for fancy meals. This quick and easy dish was perfect one evening. I hope you enjoy it, too.

Asparagus, Mushrooms, Onion, and Garlic
2 tablespoons extra-virgin Olive Oil (I’ve been using Kalamata Olive Oil)
2 garlic cloves, chopped
1 bunch of asparagus, cleaned and chopped into 2-inch pieces
½ red onion sliced
8 oz mushrooms (your favorite)
½ teaspoon fresh thyme
Salt and pepper
Red pepper flakes (optional)
Grated Parmesan cheese
In a frying pan on the stove, add the olive oil. Turn the heat to medium high and add the garlic. Simmer for one minute. Add the asparagus, red onion, and mushrooms. Cook until tender, approximately 15-20 minutes. Toss in thyme and season with salt and pepper.
For a little heat, add a pinch or two of red pepper flakes.
Serve with Parmesan cheese and a splash of olive oil.
