Friday Feast | Lemon Dream Delight


Welcome to a scorching hot Friday Feast in the Tavern! Summer has arrived in full force here in the Sacramento Valley in California. And when the blistering heat arrives, I do not feel like creating anything in my kitchen. I need time to acclimate and settle into the season.


With that being said, this lovely and delicious treat is a summertime favorite here in our home. I'm blessed to have a wonderful lemon tree out in the yard, so I'm constantly grabbing some for my water, cocktails, and luscious desserts. I've created many versions of this recipe. This lemony dessert is not labor intensive and doesn't require baking. A definite win for me!

Lemon Dream Delight


Ingredients

1 carton (8 ounces) Mascarpone cheese 1 package (8 ounces) cream cheese, softened 1 package (3.4 ounces) instant lemon pudding mix 1 cup whole milk 1 teaspoon lemon extract 2/3 cup lemon juice 3 tablespoons sugar 24 ladyfinger cookies 3 teaspoons grated lemon zest


Directions

Beat first five ingredients on medium speed until blended.

Whisk lemon juice and sugar in a shallow bowl until sugar is dissolved.

Dip eight ladyfingers into lemon juice and shake off the excess juice.

Place in a single layer in an 8-in. square dish. Spread a third of the mascarpone mixture over top. Repeat layers twice.

Sprinkle with lemon zest.

Cover and refrigerate for at least 3 hours before serving.
