Friday Feast | Pasta for my Knight

Welcome to Friday Feast, my friends! Since my knight (aka the hubby) is part Italian, pasta is on the menu once a week. Our pantry is always stocked with an assortment of various pasta. You'll never hear me say, "We're out of pasta!" Nope, not in the Morgan house.

Yet since my knee injury in April and recovering from Covid in May (and June), I haven't made my knight's favorite pasta dish: Bucatini All'Amatriciana from a fabulous cookbook by Gabriele Corcos and Debi Mazar called Extra Virgin. Though I tweak the recipe to add extra Pancette, I'm unable to post it here. It wouldn't be fair to this lovely husband and wife team to giveaway their recipe. The ingredients are few and it's not labor intensive. The final results are beyond delicious. I do encourage you to get their cookbook. It's filled with beautiful pictures and tempting meals to create.

Last weekend, I spent a wonderful evening in the kitchen making this dish while sipping on an excellent vintage of Cabernet wine from our local Bogel Winery. Even though we're struggling with our taste and smell, we still managed to enjoy the meal.
