Welcome to Friday Feast in the Tavern! I don't know what the weather is like in your part of the world, but here it's descended into summertime heat. We've had temps reaching 100 this week! And though I've admitted that summer is my least favorite season, I shall embrace all she brings forth with light fares and cooling drinks.
With the arrival of summer, the abundance of strawberries are everywhere--from my local store to the farmer's market. I slice and stuff them into scones, over ice cream, salads, and blend them into delicious drinks. I can't recall where I found this gem of a recipe. It was written on a small recipe card eons ago, so it's definitely one I pull out during the hot, lazy days of summer.
This slushy drink is great without any alcohol, but feel free to turn it into your favorite adult beverage. I know I'll be having one this weekend.

STRAWBERRY LEMONADE SLUSHY
1 box (3 oz) strawberry-flavored gelatin
1 cup boiling water
2 boxes (10 oz each) frozen strawberries, partially thawed
1 quart (4 cups) fresh strawberries, hulled
1 can (12 oz) frozen lemonade concentrate, partially thawed
1/3 cup sugar
1 can (12 oz) ginger ale
1 can ginger ale. Or to make this into an adult beverage and add your favorite gin or vodka.
In a large bowl, place gelatin; pour boiling water on gelatin and stir until dissolved.
In a blender, place strawberries (frozen and fresh), lemonade concentrate, and sugar. Process until smooth. Pour into gelatin mixture. Stir in 1 can of ginger ale. Freeze 8 hours or overnight until slushy. Stir after several hours.
To serve, spoon ½ cup slush mixture into each glass. Pour 1/3 cup ginger ale or alcoholic beverage of your choice over each. Stir and enjoy.
