Friday Feast | Honey Wheat Bread


Welcome to Friday Feast in the Tavern! First, my apologies for being absent last Friday. Not only was I celebrating a birthday (April 15th), but also, I was deep in the writing cave working on the galley for RORIK, The Wolves of Clan Sutherland, Book 2! I am so, so close to calling it a wrap. And wait until you see the cover, my friends. Oh. My. Goodness!


Now before you start asking me a longship full of questions, I promise to have more news regarding Rorik's story soon.


For today's recipe, I started to think back on the Vikings and their bread recipes. As you know from my past posts, honey was used in place of sugar. And since I love honey, I pulled out one of my favorite recipes and made a batch of bread. Yet it was gone by morning and this author forgot to take a picture before my knight descended on the loaf.

Skål (Cheers)

 

HONEY WHEAT BREAD


Ingredients

2 ½ cups wheat flour

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon baking powder

½ teaspoon cinnamon

½ cup honey

¼ cup vegetable oil

1 ½ cups buttermilk

½ cup chopped pecans, almonds, or walnuts (your choice)

1 tablespoon grated orange rind


Directions

Preheat oven to 350 degrees.

Grease and flour a 9 by 5-inch loaf pan. Mix all ingredients together, beating until blended.

Pour into pan.

Bake for 45 to 60 minutes.

Turn out onto wire rack and cool.
